To be honest I've never been crazy of the Paris-Brest until the day when I enjoyed the one from Pierre CONTICINI. This small cake, so french, invented by a pastry cook of Maisons-Laffite is directly inspired by the cycle race between Paris and Brest. In the shape of crown reminding a wheel of bicycle, it consists of puff pastry, a cream praline and of a delicious smooth praline-flavored heart. Then if you are in search of the best Paris-Brest of Paris, do not look any more and go directly to the "patisserie des rêves", on rue du Bac.
